Quick and deliciously zesty cake
Serves a lot of people
100g Cornmeal (fine) also know as polenta
100g Plain Flour
100g Ground Almonds
150g Castor Sugar
2 tsp Baking Powder
1 Orange, juice & zest (med)
1 Lemon, juice & zest (large)
1 tsp Vanilla Essence
1. Pre-heat your oven to 180C/Gas Mark 4
2. Cream the butter & sugar together until light & fluffy.
3. Beat eggs & add the eggs one at a time & mix thoroughly.
4. Once the mixture is combined, add all the dry ingredients & the zest & juice
5. Bake for 45 minutes
