Fried Dumpling

The Recipe

Ingredients:

200g Plain flour

1 ½ tsp Baking powder

15g Butter

Vegetable oil (rapeseed) for frying

100ml Cold water

Method:

1. Mix flour, salt & baking powder in a bowl

2. Blend butter into dry ingredients with hands until crumbly

3. Add water, a little at a time, to dry ingredients until dough forms. Sprinkle with more flour if the dough is too wet.

4. Knead dough until smooth; do not over knead.

5. Divide & shape dough into 6 small balls (enough to fit in palm)

6. Place dumplings into the frying pan (med heat); oil should be sizzling

7. Continually turn dumplings until all sides are brown

Fried dumplings are traditionally called Johnny Cakes, which derived from the name journey cake. During slavery times in Jamaica these fried “biscuits” were packed to take on long journeys, which is how they got their name. Today Fried Dumplings are usually partnered with dishes like ackee & saltfish, spicy plantain & callaloo curry
