Chickpea salad with orange dressing miso
The Recipe- serves 2
Ingredients:
150g dry couscous
6 cherry tomatoes, halved
1 spring onion (sliced)
½ can chickpeas (rinsed)
Fresh coriander to taste
Dressing:
1 tsp. miso
1 tsp. grated ginger
2 tbsp. of orange juice
2 tbsp. rice vinegar
2 tsp. brown sugar
1 clove of garlic, grated
1 tsp. black sesame seeds
Method:
- Cook couscous to manufactures instructions & leave to stand for 5 minutes.
- Combine the cherry tomatoes, spring onion, chickpeas, coriander & couscous in a large bowl.
- Mix all of the dressing ingredients in a separate bowl.
- Pour the dressing onto the salad & couscous & then toss all of the ingredients together.
- Enjoy, as a perfect summer side dish.
