cauliflower rice
The Recipe- Serves 4
Ingredients:
1 large cauliflower
1 onion, finely chopped
1 tbsp olive oil
Pinch salt & black pepper
Method:
1. Remove the leaves, wash & dry the cauliflower
2. If using a grater cut the cauliflower into large chunks & use the medium-sized holes (the one used to grate cheese)
3. Add your grated cauliflower, to a large frying pan & fry over medium heat in oil, add onion, salt & black pepper.
4. Cover with a lid so cauliflower steams & becomes tender. Cook for a total of 5-8 minutes.
Use cauliflower rice in recipes that call for rice, such as stir-fries or fried rice. Or enjoy it as an Indian flavoured side dish on its own. Follow the above cooking method and include additional seasoning with garlic, cumin, coriander, garam masala, turmeric, ginger, and cayenne pepper.
Store leftovers in the refrigerator for up to 5 days. Store uncooked cauliflower rice in the freezer for up to 1 month.
